You should probably check the top level .snapshot contents from a different NFS client, just to be sure that things aren't being confused by file and attribute caching, etc. The snapshots retain the same inodes as the originals, directories and all. (and, for reproducibility, what OS and version is your NFS client?) Then if weirdness still ensues, ask on the "toasters" mailing list.
