It is not really a good thing to set up something manually during the test runs, but for debugging purposes you can use the Breakpoints provided by almost all of the JAVA IDEs. At the breakpoint the test will stop and you can do whatever you want to do. But it is not a good practice to start up the tests and then halt the execution at a certain point and set up the data and continue the tests.
