Just to let you know that I got it all working. The detail I missed is
the existence of the event listener mechanism in Jahia. I guess
'Advanced Jahia Template Development' is a bit too much when you have
only 3 days of Jahia experience.
So in the end it was RTFM and copy paste the example from Philippe in
eventlistener.jsp in the root of my template dir. After customizing the
code to cater for my own container and field it all worked almost
perfectly.
The only thing that was not directly obvious was that the default value
that I set in the event listener does not show up on screen. To get that
working I also provided a default value for the jahia_calendar as
follows:

Another problem that I had to overcome was that the default value as set
in the event listener was one hour off the current time. Must be
something with the timezone settings of jahia. Corrected this problem by
adding one hour to the Calendar...
