No you should be able to use them through within the jahia template. In Edit mode on a blog entry, below the comment form, you should have a : "Sent ping urls" container which should allow you to coyp/paste the trackback url you want to ping... But I must say do not use such a feature on a daily basis, so perhaps there is a bug...

Trackbacks are not critical at all to manage a blog... This is just a nice to have (or even less) feature which is even not standardized among blog clients... The objective is just to let a blog author refer to another blog. Then the destination blog is automatically warn (and can then display a link towards the other blogs that refer to his post)... Briefly speaking a reverse web link, so that others can automatically list on your blog page that they have some posts that refer to one of your blog entry... So if you do not want it, just desactivate it in the template ;-)
