I believe the mime.types and other configuration files for Apache on OSX Server should be in /etc/apache2, possibly in a /conf folder.

We do have a working setup on a SL server; I can ask our server admin how that is set up. OS X server apache can be tricky. Robert very kindly gave me comprehensive instructions (see below) and this woredk a treat on my development server. Unfortunately my production server is running OSX Snow Leopard. I can't even find a mime.types file in this set up. Mime types can be set up through the GUI but I have delete (rather than commented) the "text/html" line and restarted Apache but to no avail.
