Edit the build_fat.sh file to reflect the actual version number and location of the iPhone SDK you have on your computer. The 10.5 version of the script is looking for SDK 2.2.1 and the 10.6 version of the script is looking for SDK 3.0.
Regarding Tesseract 3.0 / svn....I haven't tried to use the script for that version.
