Yes, you can extract the different components from traineddata - but that does not give you the box/tiff pairs.
See http://tesseract-ocr.googlecode.com/svn/trunk/doc/combine_tessdata.1.html for a list of the components in traineddata If you do need customization, try what Quan has suggested and use your traineddata in addition to the official file.
