Pointers to it should have been sent upon your subscription.  The
question is off-topic as it does not concern the specifics of the
teTeX implementation.

   I'm writing a paper for submission and wondering if there is a way
   to separate captions from figures and tables and collect them on a
   page at the end of the document. The endfloat-package do this for
   floating enviroments like tables and figures, but not for captions.

\listoffigures
and
\listoftables

are what you are looking for.

Every introductory text would have told about those.
