Does anyone know of a way in MusixTex to change the color of notes and
beams? I’m working on some musical examples for a course I’m teaching
and would like to be able to highlight motivic features using colored
notes.
Thanks.
In the summer of 2002, colonel George Sicherman posted a musixtex-file to demonstrate the changing of colors in musixtex using colordvi. I've attached these files.

A small example demonstrates that the colordvi method may be applied directly within M-Tx/PMX code by means of in-line tex:

Style: piano Meter: C

%% \input colordvi

c4 d e f | \textBlue\ g g a b | \textBlack\ c0
c4+ b c a | \textRed\ b g f d | \textBlack\ c0
