Hello Stefan, Ubuntu is likely to contain the same package as Debian but there exist various versions. I have musixtex_0.112.2-4_i386.deb installed on my system. The perl script is /usr/bin/musixtex and runs at least with perl v5.10.0.
I have never seen any musixtex-mode for emacs. But you may enter the command as shell command from the menu (shortcut M-!).
