This issue is one of those fortunate areas of software engineering where
there is one and only one correct choice, and this is "text/x-texmacs".
So the correct solution would be to ask to the people maintaining
mime-support on Debian and Ubuntu to change text/texmacs to
text/x-texmacs, then to perform the same change in all texmacs and
texmacs-common files.
Perhaps it is not worthwhile, since everything seems to be working
perfectly at the moment...
