When rava is cooked add sometbsps of oil or vanaspati, mix and immediately off the flame. Cover and leavefor 5 to 7 mins. Garnish with fresh cut corianderleaves. Serve with spicy chutney as upma isn't very spicy. Upma is one of the tastiest toeat and easiest of dishes to make if done well. Suddenly my appetite becomes 5Xof my regular appetite :). I will take at least two servings of rice withSambhar, Rasam and one each with Aviyal, Poriyal and Keera Kootu. The beauty of a typical SouthIndian meal is the variety: Variyal and Aviyal can be cooked in 100s of different ways and each one is better than theformer :). So is true with Sambhar too! The different pickles and Chutneys havetheir own importance and each has a different flavour and taste. I have neverbeen disappointed with this meal, be it at a high end hotel or a mid size one. Other than Sappadu, I love PodiIdli. Once I discovered Podi Idli, plain idli seems to me a fraud played on mankind!
