Always hire employees who like people. You want people that are enthusiastic and fun. Restaurant people need to be 'people people'. You do not hire people that are just looking for a job and after the money that goes with it. That will be a recipe for disaster for any restaurant. You want people that want that job because it's what they enjoy. As a restaurant owner you will always want to make sure that there are some things that cannot be taught. You cannot teach someone to smile or to make people feel comfortable. You cannot teach people to be genuine. These are skills that are innate...they come from a persons personality, not from training. Experience may be important, but good interpersonal skills are paramount. Here are a few things to think about when it comes to staff: * Always hire an incredible host or hostess. They should seem thrilled to see the customer. * Your waiters should always understand that it is in their best interest to have great rapport with customers. Their tip average will go up accordingly. * Your waiters are your primary sales force. * Your staff needs support and encouragement. * Include tasting sessions for you staff * Do not allow your staff to use formatted 'parrot fashion' script. * Train all staff in selecting, opening and serving wine * Keep your staff informed of your plans and also any changes * Give business cards to staff members... if not their own give them some of yours * Encourage staff to take initiative * Allow chefs to take risks * Allow time for managers to mingle with guests * Make sure they say goodbye to all your customers and make them look forward to returning * Pay attention to staff perceptions You must understand the difference that training can make to the success of any restaurant or café. It produces higher levels of efficiency and also achieves greater staff loyalty and commitment. You are all a team and reliant on each other.
