If you’ve yet to experience rich, decadent chai, get ready for a
real treat. Chai (rhymes with 'pie') is actually the word for
tea in many parts of the world. Chai is a spiced mild tea that
originated in India. It’s one of the most popular drinks in much
of the Middle East. Indians have been drinking chai for over 5000
years, and they drink it hot or cold. Legend has it that chai was
invented by a king in the courts of India and Siam. It is told

Chai is made with rich black tea, milk, sweetener and spices. The
spices vary, but the most common are cinnamon, ginger, cloves,
cardamom and peppercorns. It is essential that a good chai recipe
contain both sweet and savory spices, and that they be ground
together before adding them to the tea. It is also essential that
chai contain some sort of sweetener, as this helps to bring out
the flavors of the spices. In traditional Indian chai, the
sweetener is often honey.
