I don't know anything much about the specifics you asked but I had a mac for a 
short while, and helped someone recently.
I found homebrew let me install all the stuff I needed without having to get an 
apple account.

But you do need to work out how to make sure things you install are
found on the path, because (some?) things don't get installed in system binary
paths, they put in their own app buckets.

So to have survex be found and work properly (whcih helps therion), you need to 
add the survex location to your path.
Same for latex so that therion can find it.
For Tunnel (whcih you probably don't use), there is a config variable: 
TN.survexexeccutabledir and a path which can be set in
symbols/fontcolours.xml   (lines like "<survex_executable_directory 
name="/usr/bin/"/>), and then probably re-run brew.

hope that helps a bit. Macs don't make life easy for this stuff.
