I think, it depends what do you need :

First : Sort result by custom alphabetical

Prefer sort 'letters' than numbers

Fondant a
Fondant b
Fondant special
Fondant z
Fondant 1
Fondant 2
Fondant 3
Fondant 4
Fondant 5

I think Sphinx have an option to sort the results in specificate
Locale.

Second, You want just "Fondant special" and something others words in
the top.

I think, it could be done by field_weights, Ryan Bates make a
screencast to explain that.
