With the uninstalling - thinking-sphinx (hyphen), not thinking_sphinx 
(underscore) should do the trick.

That said, the rake tasks should work. I'd recommend using the latest 1.x 
release (1.4.3). How are you specifying the TS gem in your environment.rb?
