Logging for all the various WebMail clients is a function available in
the main WebMail add-on. To access it, on the Thunderbird menus, click
on Tools > Add-ons, Select WebMail > Options. Select the Logging tab
at the top and enable the Logging checkbox. Please note the location
of the resulting log files, the default is a pretty long path/file
name. You can change the location if you wish. To complete, you must
restart Thunderbird. Also note, the resulting log file will contain
usernames and passwords. You would be wise to do a Find/Replace on
those to change them to a generic username and password before
submitting.
