Hi Jakob, I think that the problem here is that the custom field does not exist until you open the tiddler to create it. Where are you displaying the wikified text?
You could do some kind of filtering so that you don't display those tiddlers where the field does not exist. HideWhen plugin? ForEachTiddler? I had a similar problem with wikify plugin. I got round it my defining the values in a 'configTweeks' tiddler, tagged 'systemConfig'.
