Scott, I have done something very similar exporting Products (posts in woocommerce) in csv files and using JSON mangler to import the csv and rebuild into tiddlers in a plugin package.
I am sure there are tools to assist in post exports. However if you go into the database tables you can issue queries for post data and export that. I am happy to help more, explore it myself but perhaps not for a few weeks.
