I figured it would be simple, and most of the work is going to be
done in the tags. Basically, everyone owes dues and everyone owes a
prepayment for 5 meals. I want to track who has paid these two. No
need for math, Just, "Did they pay?"
In that case, you might just tag each person with the outstanding
payments (e.g. "toPay:membership2010"), removing/renaming each tag as
the respective payments comes in?

There are plugins for handling tags in that way, I'm sure others here
could recommend some.
