I use Saq's FullScreenPlugin (3) for fullscreen and I know that Eric has a whole bunch of useful plugins for optimizing viewing space and for changing themes. Also, Mario has a good example for selecting themes (4) from MainMenu. I'm sure that could easily be adapted, perhaps via Eric's TaggedTemplateTweak (5).
