Generally, the TW5 equivalent to the old HideWhenPlugin is the new
<$reveal> widget.

There is a built in "Read Only" theme that hides most of the editing
distractions from end users. It's a little clumsy at the moment: you'd have
to select the Read Only theme before saving, and then go back to an
ordinary theme to resume editing.

You can remove the tags and author/date parts of displayed tiddlers by
editing these two tiddlers to blank out their contents:

$:/core/ui/ViewTemplate/tags
$:/core/ui/ViewTemplate/subtitle
