TiddlyWeb has excellent documentation in the distributions at
http://peermore.com/tiddlyweb/dist/
under the docs directory there is a COOKBOOK that helped me out
tiddlyweb-0.9.9/docs
But since v0.2, the set up has gotten way easier -

after python and the easy_install module is in place:

$easy_install -U tiddlyweb

will install tiddlyweb to the latest version like magic (make sure
that -u argument is in there as i forgot many a time and was confused
why it didn't update to the latest)

Then to make an instance with a text store to hold the whole lot of
bags, recipes, policies and tiddlers:

$twanager instance mystore

The COOKBOOK shows more twanager goodness: how to import a tiddlywiki
into tiddlyweb, starting the server, etc

I tested some screencast software: http://camstudio.org/ for Windows

It worked well for small screencasts and can save as .avi files. Maybe
try that?

But there isn't much to look at other than running some commands at
the prompt and opening a recipe in the browser.
So yes, 'definitive' is hard to define.

Another option is Snapz Pro X for the Mac.

I haven't delved into movies yet, mainly just simple captures, so I'll
report back if I figure it out.

I recall one of the Phils' at Osmosoft hosting in vimeo some
tiddlywiki vids maybe TiddlyWeb can host here too or youtube.
