I think Mat is suggesting that the field names in the field editor should also be editable. It's a good idea, but as it happens a bit hard to do directly. A slightly simpler possibility is to add an edit/pencil icon to the displayed fields which would remove the field and put the name/value in the name/value input boxes for editing and re-adding.
