- copy & paste: with TightVNC I could only copy & paste from/to
 terminal windows on server side (so if I wanted to get some text
 from Windows to an X application, I'd have to paste it to a terminal
 first, and copy again from there). With TigerVNC, I can copy/paste
 the text directly to/from other X applications, but I can't copy
 more than 1 line from terminal windows running on the server to
 Windows (unless I copy empty lines - in this case, the text is
 transferred to Windows).

No idea on this one.


- key repeating: if I press and hold a key, it appears that only the
 initial keypress is registered by the server. This happens
 regardless of which viewer I use, so it appears to be a server
 problem.

Correct, this is a Xorg problem. I don't remember the details of the fix, but check the list archive.



Also, is there any way to set the keymap used by the VNC server?

You are using Xvnc? In that case, this should in principle not be necessary. The except is broken applications which requires that certain keysyms are mapped on some hardcoded keycodes. In any case, you can use normal tools such as xmodmap to change the keymap.
