There is such an exemple (probably the most famous), it has been elected 
project of the month on Sourceforge this month:

Smile is also working on a large transportation system that use very few 
OpenERP modules.

Still, bare in mind that the Openobject framework, while extensive, is not as 
mature and perfect as say Rails or Django, meaning that yes, there are lot's of 
built'in things (BPM, translated reporting, right management, cache smart cache 
management...), but there are also less liberty than in the framworks I 
mentioned, especially for the interfaces (you can also create other clients, 
using for instance:
http://ooor.googlecode.com/svn/trunk/README ). As for the datra model, the 
larger constraint is the "activerecord" pattern, but it's generally OK for 90% 
of the new projects.

So it's up to you to make the right choice for your need. Also, Openobject 
might be far from perfect, it's exceptionally brilliant in the ERP world were 
legacy crap and 20 years old dino tech tend to bloat the place and it's also 
progressing steadily toward more perfection, I guess it will be as clean as 
today's Rails or Django in some 2 years.
