Thanks for your answer. I should have told that I'm in France. I've read the whole doc and I think I've understood the principles.
My problem now is that I don't understand which number account I have to use. In the doc example I see 109000 is used for inventory location. Should I use 350000... for product stocks ? How should I configure those accounts ? My accountant for the moment doesn't agree that we use financial account to track stocks as it is not the official chart of account.
