Sounds like multi-company is something you should investigate (as you have). But I understand that the next version of Open ERP will have more multi-company modules and have multi-company enabled by default. You'll need to decide how separate everything really is. If everything's separated then keep separate databases. If nothing is separate then it's all in one database.
