Sounds like multi-company is something you should investigate (as you have). 
But I understand that the next version of Open ERP will have more multi-company 
modules and have multi-company enabled by default.

You'll need to decide how separate everything really is. If everything's 
separated then keep separate databases. If nothing is separate then it's all in 
one database. If some things are separate (some or all of products, partners, 
accounts, etc) then you'll need some degree of multi-company or duplicates in 
multiple databases.
