Read through the doc/tutorial stuff to get the basic ideas. You should be able to replace the DemoSensor component in Oscope with a straight-to-input ADC access. Look at the Sense app for an example. I'm assuming your sensor is an analog thingie. On the host side the Oscope java demo shows a graph. There are others on this list who have connected to MathLab I think, you could try a search in the list. You can also hack something like Listen.java to dump just the data in some nice format and suck it into Excel, etc. Otherwise, welcome to to the wonderful world of Java programing...
