The graphs are generated as part of the documentation, and can be found in GIF format in the nesdoc documentation directory.  Additionally, the source code which describes the configuration and formatting of the graphs (in the 'dot' language) should be in the same directory.  Documentation for dot is online, so you can manually edit the source for the graphs and generate your own versions if you like.
