Xubuntos is just a small configuration of Xubuntu. I guess a proper place to ask that kind of questions is a Vmware / Ubuntu / Xubuntu forum.
Now about your specific issue: I'd suggest you configure your virtual machine to boot from a live cd iso (Xubuntos would be fine), then mount the vm hard disk and rescue your working folder, back it up on some safe place and reinstall ubuntu.
