Not sure what could be going wrong, but this is something I do all the time.
BoilerPlate ( http://tinyos.cvs.sourceforge.net/viewvc/tinyos/tinyos-2.x-contrib/shimmer/apps/BoilerPlate/) is easily configured to do this, but this may be an overly complicated example for your needs. Take a look at SimpleAccelGyro ( http://tinyos.cvs.sourceforge.net/viewvc/tinyos/tinyos-2.x-contrib/shimmer/apps/SimpleAccelGyro/) for a simpler example of enabling multiple sensors simultaneously.
