While, I do not know of a specific movie or educational film on defense mechanisms, I would probably turn to popular cinema and ask students to identify defenses from a list that I prepared.
For example: The Prince of Tides (while not a great movie and fraught with ethical dilemmas) it did illustrate: denial intellectualization repression sublimation You could probably do this with other films. As the teacher pre-identify the defense mechanisms that you see at work in the characters and then ask students to describe how they appear in the film.
