Michael,

For many years I used the Schwartz et al text, Psychology of Learning and
Behavior.  However, a few years ago I switched to Chance, Learning & Behavior.
The Chance text is at a lower level, but seems more approachable for the
students.

In the lab, we do the partial reinforcement effect during extinction,
light/dark discrimination, a simple chaining, and then design your own
experiment.
