I'm not personally very involved in this on our campus, but we do have a
structure you may find interesting. You can read about it at

    Essentially ALL of our undergraduate students (regardless of major) do
internships of some sort, and that of course requires a lot more structure
than simply a couple of faculty arranging things. We have an internship
office with a number of fulltime staff who work with students to get
placements, and who coordinate contact with the site mentors. Students also
take an internship course concurrent with the field work, and the site
mentors provide standard feedback to the course instructors.
    Unfortunately, right now the department is still almost entirely
responsible for background checks, and that has become a problem for us,
especially as we have more and more students at placements, and as the gov't
budget crises have caused the costs to skyrocket.
