At Indiana University Kokomo, we have a senior seminar course. This is run as an in depth study of some area of psychology that the instructor is particularly interested in (or occasionally is a student decision as to what they might like to learn much more about.) As I said, it is run as a seminar with the instructor having primary responsibility for the course for the first 4 - 6 weeks and then the students presenting what they have gotten from the research in the area. In general, it seems to work well.

Now,I'd like to say that one of my favorite capstone experiences was to have an advanced General Psychology class. At a former school we would use one of the "powerhouse" Intro books as the text as well as have groups of students work on the specific areas covered in the text and would also include some history of psych as part of the course. Students liked this course and those who went on to take the subject area psych GRE said it helped a great deal.
