APA has a good set of resources including guidelines for an undergraduate psychology curriculum and assessment guides. You can find most of those resources here http://www.apa.org/ed/resources.html on the APA education directorate website.

We found the guidelines to be very helpful in organizing our own review.

Sorry for the cross listing. Does APA have guidelines for undergraduate psychology curriculum?  We are currently evaluating our curriculum and were looking for a set of guidelines or similar information

Thanks
