I used to go to an Italian butcher in town. He made the best prosciutto
you've ever had. He would regularly complain about Anglos coming in and
asking him to slice prosciutto "without much fat in it." But a certain
amount of fat is precisely (among other things) what made it the best
proscioutto you ever had. Otherwise it is dry. "If they are watching
their weight," he would say, "then they should each a smaller amount of
the best, not more of the worst."
Same for beer. Worried about your weight? Drink less of the best. Not
more of the worst.
(BTW, I take a pint of Boddington's on tap over any bottled microbrew I
have ever tasted.)
