For an opaque brain, make sure to use fat-free evaporated milk instead of 
water.  Recipes are on the web.

One idea from the web I used successfully was to garnish the brain with nerves 
(boiled spaghetti – put in to a plastic bag with food coloring of your choice 
to make it distinctive).
