any of your labs or research programs involve collecting and assaying saliva
for cortisol levels? If so, would you contact me so I can pick your brain a
bit?

You could use the Chinese stress detection method- put some rice powder in
the mouth of subject.If after being subjected to stress factors the rice is
still dry,this may indicate a high level stress reaction.
