You appear to be assuming that you know how they do this: that it is based
on some kind of Œstandard person.¹

Decent chance, it is based on deviations from the established baseline for
each person. At least, that is the approach for all the physiological
measurement work I have done.  If the system is within-person-based, it is
already taking into account a good deal of variation due to ethnicity and
gender factors.
