...Students write a one page action letter to a company, corporation...

How about, the letters go to a classmate who plays the company, corporation,
etc., respondent?  Maybe the students could be encouraged to see the letters
"from both sides" as it were. If the names were coded and the pairs picked
at random, respondents might feel freer to say why or why not they would
invite the applicant for an interview, or whatever the next logical stage
might be. (Might be a good idea to say something about the fact that
corporations will normally be polite and constructive even in their
rejections -- or ought to be, in the interests of their public images.)
