Annette Taylor mentioned Ashcraft's larger text Human memory and Cognition,
and I agree it is a lot for a UG course. His shorter Fundamentals of Cognition
is a more recent book that I have successfully used in conjunction with
additional reading materials.
I have also used Solso's book (4th Ed.) but decided against the 5th Ed.
in favor of Aschraft. He added a lot of neuro content (which is good)
but I didn't like the way he did it.
I'd also praise to the instructor's demos to Reed's book by Tom Pusateri.
Other folks I know like Best, and I received a new text by Payne & Wenger
that looked interesting (anybody incorporate it into their class and
have comments?).
