Jim,

One suggestion I would have, if you choose to go with several topical books 
rather than one comprehensive textbook, would be John Gottman's _Seven 
Principles for Making Marriage Work_.  It's based on sound research, 
although it does not have the sort of sociological emphasis that most 
marriage & family classes seem to have.

But it would be a nice supplement to big overviews, and has a lot of advice 
they can use in their relationships.
