I have to say I'm somewhat impressed at the choice of texts. I teach a graduate level Counseling Theories course that uses the same text, and I've typically seen those texts used in graduate courses. The students at your school must be very strong.
The syllabus for the summer version of my course is available here:

During the fall term (because I have more class time to do so), the "case summary" becomes an oral case summary and discussion. I would think the activities/papers should be doable in your course as well.
Good luck!

I have been asked to teach undergraduate Systems of Psychotherapy which is
described in the university catalog as "Explores the major schools of
psychotherapy. The course includes an extensive use of actual case studies."
The required textbooks are Current Psychotherapies, 6th Ed., by Corsini &
Wedding and Case Studies in Psychotherapy, 3rd Ed., by Wedding & Corsini.
Does anyone know of any resources (websites, class activities, paper
assignments, etc.) that I might find helpful? Thanks.
