I only dig some of that psychoanalytic stuff,but it should be noted that the Aztecs saw horses when Cortes and his band of conquistadors arrived in Mexico .Mexican mythology had something to say about white men riding on horses. Unfortunately the rest is devastating history for the conquest of the Americas. So the archetypical symbol in the Americas would be different from the theorizing Eurocentrics. As the cross-cultural dude on Tips,I doubt women in the Americas fantasize about horses,except if the family has a hacienda or a latifundia or is related to a caballero in Panama. It appears that horse riding stimulates and work out body muscles that are rarely exercised,as does swimming.
