I suppose this is largely a matter of opinion. I started using a dated
Reply-To a few months ago for the reasons described in:

Thus far, the only problem I've had is that sometimes people will
compose a fresh message to [EMAIL PROTECTED] instead of replying to my
message, so the dated address doesn't get used, which means they get
faced with a confirmation request. This doesn't happen very often
though. 

The advantage of a dated From is that there is no way around the dated
address, so the chance of being faced with a confirmation request is
lower. Overall, I still prefer a 'bare' From / 'dated' Reply-To I think.
