By outgoing mail, do you mean mail you send?  You can put any header
you like in mail you send.  Look at the ADDED_HEADERS_CLIENT
variable.  If you mean mail that TMDA sends as a result of incoming
mail (confirmation requests, bounces, etc.), then you probably can't.

Mail delivery commonly takes place after the TCP connection is
closed.  You might be able to parse the original sender's address from
Received headers, but in the case of spam they are often spoofed.

If neither of those scenarios is what you were thinking of, could you
clarify a little?
