The only reason that I'm aware of that mail gets automatically sent to
postmaster is in the case of a double bounce.  This suggests that your
DNS setup may not be correct for your test domains.

Because the home directory is incorrectly set (this is not your fault)
and you have no .../postmaster/.tmda/config file that sets DATADIR

This should all be one line.  You can't use the '\' to mean that the
line continues.  You just need to make sure that it's all on one
line.  It will wrap inside your editor or terminal and that's ok, as
long as there are no actual newline characters.

You need to set DATADIR, at a minimum.  Several other settings, such
as FILTER_INCOMING and FILTER_OUTGOING will also need to specify the
full path to the files rather than using the default settings, which
are "~/.tmda/filters/incoming" and "~/.tmda/filters/outgoing".  The
'~' doesn't work correctly under vpopmail.
